Hi, I'm Chuck, webmaster and 1/4 of the Peaks owner family along with my brothers-in-law Tim and Pete and my wife Beth. Back in Wisconsin, where we all grew up, Frozen Custard is the iconic dessert. You can get regular ice cream and other desserts, but people take their favorite frozen custard very seriously. It's not uncommon to see enourmous lines all day during the hot summer at some of Wisconsin's famous stands. Since we moved here in the early 1990s, a qfrequent conversation topic amongst our Midwest expatriate friends, has been the lack of Frozen Custard and the relative lack of great ice cream shops in Seattle. During the ensuing 16 years or so we probably discussed opening a Frozen Custard stand in Seattle hundreds of times. Fast forward to April, 2008 and Peaks Frozen Custard, LLC was formed.

We started building out our current space in July 2008. It was about this time that our partnership with Snoqualmie Gourmet was formed and we started trying different mix proportions and experimenting with flavors. We had our soft opening the day after Thanksgiving and our official grand opening on Feb 14, 2009.

We love selling tons of Frozen Custard and striving to provide the best quality and value ice cream available. We're also creating a space where the community can congregate, be entertained and generally have a great time, and we're doing it in sustainable, environmentally friendly ways. Quality

At Peaks, we want whatever we serve to be the highest quality and we strive to serve it with the best service possible. How do we do that?
  • We make everything we can from scratch right here in our shop. This includes our Hot Fudge, Pineapple, Strawberry and Raspberry Sauces, all of our Bakery except the wonderful gluten free bakery from Sister Soul's, our Waffle Cones and Bowls, and many of our custard flavorings as well as the custard itself. This allows us to bring you the freshest and best ice cream and baked treats possible.
  • When it's not practical to make ingredients ourselves, we use locally sourced ingredients where possible and it increases quality. For things like dairy and produce we believe that local suppliers make our products fresher and tastier (and easier on the environment too). Here's a list of our local suppliers:
    Snoqualmie Gourmet Provides our custard base made with hormone free milk from Western Washington cows
    Lighthouse Roasters Provides all of our coffee and espresso as well as whole bean coffee for sale
    Mike's East Coast Sandwiches Provides ready made sandwiches including the Peaks Club
  • Where it's necessary to use supplies from further afield we make sure we use the best, most natural products available. For instance, all of the custard flavorings we don't make ourselves are 100% natural flavorings.

Community

Peaks is delighted to be a part of the Roosevelt neighborhood and of the greater Seattle area. Part of our mission is to provide an environment for the community to congregate and be entertained. This is one of the main reasons we chose our location. Peaks has the space and facilities for many different kinds of gatherings and events. We've hosted the mayor and his community advocacy forum, the Roosevelt business association, the Seattle deaf professional's network, the Arc of King County and numerous birthday parties, business meetings and other gatherings.

Peaks is also working with local performance groups to provide free entertainment to our community. We've had local singer/song writers, traveling folk musicians the Roosevelt HS chamber orchestra and coming fall of 2009 we'll be hosting weekly open mics.

Another part of our mission is to actively participate in the community. Peaks has worked with local artists and coops, including our good neighbor Ten Thousand Villages the fair trade store, to provide rotating art displays, most of which are available for sale. Peaks has also sponsored many different community events including our very own women's softball team (congratulations on the 2nd place finish!), several charity auctions and the Roosevelt High School football team, drama department and orchestra.

Sustainability

We at Peaks are committed to striving toward an ecologically sound and sustainable community. This means using local suppliers where ever possible, minimizing waste, reusing and recycling what we can and working with like minded partners.
  • We use compostable cups, bowls, and utensils from Cedar Grove compost in Seattle who also provide our composting services. www.gogreenscene.com We work hard so that if you can't eat it, reuse it, recycle it or compost it, then we don't have it.
  • All of our espresso and coffee is roasted locally by Lighthouse Roasters located on Phinney Ridge in Seattle. www.lighthouseroasters.com
  • Our custard mix is created exclusively for Peaks by Snoqualmie Gourmet, a model of sustainble building and operations methods. The milk and eggs used for the mix comes exclusively from western washington farms www.snoqualmiegourmet.com
  • All of our delicious sandwiches are made with care in Belltown at Mike's East Coast Sandwiches. www.mikeseastcoast.com
  • We use local food markets and cash and carry for our fruits, vegetables and other staples. If you are a local fruit or vegetable producer please contact us.
  • We used recycled paint from Second Use which we had tinted by Home Depot. This was a great find, it worked well and was reasonably priced. www.seconduse.com
  • The wood panelling throughout the store comes from Wisteria Cottage in Lacey specializing in vintage home and garden items www.wisteria-cottage.net
  • The maple boards in our serice counter were part of the alleys at the now defunct Sunset Bowl in Ballard
  • All of our appliances are energy star efficient and we use flourescent and low wattage lighting
  • Almost all of the furniture, fixtures and doors were salvaged from local antique or salvage shops such as Earthwise. Our bathroom doors are from a demolished Capitol Hill apartment complex
